    You can grate zucchini and freeze it in two- or three-cup packages. Then pull some out of the freezer to use in cooking or in breads all winter long. 🙂 Well, you can freeze it if you don’t want to gift your neighbors, friends, and even enemies with your zucchini bounty. LOL!

      Kim,
      Fortunately, this year’s overproduction has not been as overwhelming as others. One year, I seriously considered carrying excess zucchinis in my bag to church and slipping them into fellow members’ purses during prayer.

      But God nixed that.

      I tried freezing one year, but the result looked like green slushy, and I couldn’t bring myself to put it into anything. Any tips? And thanks for your comment!

    T.R. discovered a wonderful recipe for chocolate zucchini bread a few weeks ago. It’s been a big hit! I like Kim’s freezer idea – we have a pile of zucchini yet that will likely be shredded and frozen. 🙂
